Elodea and onion cells are plant cells. Plant cells have a cell wall which helps give the cell its shape.
On the other hand, human epithelial cells are animal cells. Animal cells do not have a cell wall to help give the cell its shape.
Therefore, elodea and onion cells have a more consistent shape then human epithelial cells.
