Starch is a form of complex carbohydrate i.e consisting of multiple sugar units (polysachharides). It a mixture of amylose ( $\alpha -1,4$  linked glucose polymers ) and amylopectin ( $\alpha -1,4$ linked glucose polymers branched by $\alpha -1,6$ linkage)
