1).Crack the eggs you will need for the day into a large container, beat, and keep next to the grill for your expected orders

2).Pour the pooled eggs into a clean mixing bowl after several hours

3).Take out as many flats of eggs that you need for the day. The eggs are safe as long as they are not cracked

4).Take out only the number of eggs you expect to use in a short period of time and crack them as needed

The correct option is NO 4. In order to ensure food safety and to prevent contamination, the eggs needed for the omelets should be kept in the refrigerator right up until the time they are needed or one can take out the few eggs that will be used shortly.  

I believe the answer is: 4).Take out only the number of eggs you expect to use in a short period of time and crack them as needed

If we leave the eggs out of the refrigerator a long period of time, we would risk the egg becoming spoiled and can no longer be usable.   Because of this we shall not take more than we need and we must used the egg as soon as it is taken our and cracked.  (so the bacteria have no time to spoil the egg)
