Which word could best replace either of the underlined words in the paragraph?

I was helping Grandma make her homemade spaghetti sauce. I noticed she added a pinch of sugar to the sauce. When I asked her why, she told me it was to neutralize the acid in the sauce. It helps to counteract the acidic taste from the tomatoes.

It would not be activate, activating an acidic taste wouldn't make sense if you want to neutralize it or add sugar to it.

It would make sense to say "sweeten" because we are adding sugar to the sauce, and sugar is sweet.
