Too add more diversity from what the original chapters had. Also the chapters were used to tell a much BIGGER story about what was termed the Dust Bowl.

*also I think if you read the chapters by themselves, it really helps. It's a good story, if you don't like reading then watch the movie....but reading the book will answer ALL the questions you may have, whereas the movie kind of leaves important stuff out. Just saying haha.*
