Spain
Paella: the name refers to a type of cooking pan.
Tortilla: its ingredients are potatoes, olive oil, salt, onion (optional) and eggs.
Cocido madrileño: a type of stew that used to be eaten by the Spanish working class.
Colombia
Sancocho: soup with meat, vegetables, tubers and condiments.
Arepas: it is fried and made with corn.
Ajiaco: its ingredients are three kinds of potatoes –criolla, pastusa y sabanera-.
Mexico
Pozole: soup which main ingredient is corn.
Mole: its ingredients are various types of chili, species and seeds.
Enchiladas: tortillas with different ingredients inside such us chicken, cheese, turkey, etc.
