This question actually seems tough at first, but it can be done. Think of verbs as "action words". Its what the subject does in the sentence. The subject of this sentence is the "Appalachian trial". What does the Appalachian trail do? It "consists" of 2,168 miles of breathtakingly beautiful country. So the "action" being done is "consisting". Thus the verb in this sentence is consists. The question says "verbs". I do not know if you meant to say verb(s) as if they may only be one. The only other word that I think could be a verb would be "breathtakingly", because breath is being taken away.
