It is possible for liquids (water) to turn into solids because when liquid (water) is cooled to its Freezing point the particles lose so much energy that it can no longer move around each other and the liquid becomes solid. Example : Ice

A liquid can turn into a gas over a range of temperature without boiling by a process called Evaporation . In this process some of the liquid at the surface changes into gas and mixes with the air. It happens because the particles have different amounts of energy and those with most energy move the fastest.

Sorry if it's to confusing, but hopes it helps :D
