If they didn't differentiate then the stem cells would stay the same type and if it somehow kept multiplying then they would just be a massive blob with no actual form or way of functioning.

If they don’t differentiate then you don’t end up with a living organism, just a blob of cells. After it gets to a certain size, and not all that big, it would die from the lack of oxygen as it would not develop a way to get oxygen and nutrition from the surface to the interior.
