what is the difference between ripened and unripened cheese?

The difference is that ripened cheese like Parmesan or Cheddar, can be stored or aged until it reaches the desired taste. Unripened cheese like Cottage cheese or Cream cheese, is sold as soon as it is manufactured and doesn't age.
