To show support of Feldman and his idea.  The honor system: Feldman's business idea that if you are taking a bagel, you leave payment for a bagel.

While Feldman's friends told him the idea wouldn't work, somehow it did.   So the author's purpose in using this particular quote is to show that the theme of his book proves Feldman's idea to be true.  Or the reverse could be said....That Feldman's idea would work out based on the theme of Smith's book.
