Water has a very high heat of vaporization that is why more and more heat/temperature is required to evaporate it. We have sweat glands in our body. In hot summer weather, sweat is released from the glands as soon as sunlight falls on our body. Because of the sunlight, this sweat gets evaporated and we feel cooling sensation.  In short, this heat from sunlight rather than destroying our body is rather used to evaporate the water from our body in the form of sweat. High heat of vaporization plays a very important role in this mechanism because due to high heat of vaporization more and more heat can be absorbed by water and our body can withstand very high atmospheric temperature.
