The colored part of the human eye that controls how much light passes through the pupil is called the Iris.  

The iris (plural: irides or irises) is a thin, round structure in the eye, in charge of controlling the distance across and size of the student and hence the measure of light achieving the retina. Eye shading is characterized by that of the iris.
